- 2 cups Basmati rice
- 500 grams chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon Zurbian spice mix
- 4 cups water

Method

Heat the vegetable oil in a large pot over medium heat. Add the sliced onion and sauté until golden brown.

Add minced garlic to the pot and sauté for another minute until fragrant.

Add the chicken pieces to the pot. Cook until browned on all sides, about 10-15 minutes.

Stir in the Zurbian spice mix and salt. Cook for another 5 minutes to let the spices infuse into the chicken.

Pour in the water and bring to a boil. Reduce heat and let it simmer for 30 minutes, or until chicken is cooked through.

Remove the chicken pieces and set aside. Add the soaked Basmati rice to the pot. Stir well, then place the chicken pieces on top of the rice.

Cover the pot with a tight-fitting lid and cook on low heat for about 30-40 minutes, or until the rice is tender and has absorbed all the water.
