Indulge in the sweet, fragrant delight of Zlabia, a traditional North African treat made from crispy fried dough, drizzled with honey and infused with rose water. Perfect for festive gatherings or a cozy dessert after dinner.

- 2 cups all-purpose flour
- 1 cup warm water
- 1 tbsp yeast
- 1 tbsp sugar
- 1/2 tsp salt
- 2 cups vegetable oil
- 1 cup honey
- 1 tbsp rose water

In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 10 minutes until frothy.

In a large mixing bowl, combine the flour and salt. Gradually add the yeast mixture to the flour while stirring to form a smooth batter.

Cover the bowl with a clean cloth and let the batter rise in a warm place for about 1 hour or until it has doubled in size.

Heat the vegetable oil in a deep pan over medium heat. Once hot, use a piping bag or squeeze bottle to pipe the batter into a spiral shape directly into the oil.

Fry the Zlabia until golden brown, flipping them occasionally for even cooking, about 2-3 minutes per side.

Remove the Zlabia from the oil and drain on paper towels to remove excess oil. Drizzle with honey and, if desired, add rose water for flavor.
