- 2 cups basmati rice
- 1 cup zereshk (barberries)
- 1 medium onion
- 2 tablespoons butter
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 teaspoon saffron threads
- 4 cups water

In a large pot, bring 4 cups of water to a boil. Add the soaked basmati rice and salt, and cook until the rice is al dente, about 5-7 minutes. Drain the rice and set aside.

In the same pot, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until golden brown.

Add the washed zereshk to the onion and sauté for another 2-3 minutes. Then, mix in the sugar and cook until the zereshk is slightly caramelized and fragrant.

Layer half of the cooked rice on top of the zereshk mixture in the pot. Drizzle half of the saffron water over the rice. Repeat with the remaining rice and saffron water.

Cover the pot with a lid and cook on low heat for about 30 minutes to allow the flavors to meld and the rice to steam.

Once cooked, gently fluff the rice with a fork, mixing in the zereshk layer. Adjust the seasoning if necessary.

Serve hot, garnished with the remaining butter and additional zereshk if desired.
