Indulge in the vibrant flavors of Zarda, a fragrant saffron-infused rice dish adorned with mixed nuts and raisins. This delightful Indian dessert is perfect for festive occasions or as a sweet ending to your weeknight dinner.

Ingredients

  • 1 cup Basmati rice
  • 2 cups water
  • 3/4 cup sugar
  • 1/4 cup ghee or clarified butter
  • 1/2 cup mixed nuts
  • 1/2 cup raisins
  • 1 teaspoon cardamom powder
  • a few strands saffron

Method

  1. 1

Rinse the soaked Basmati rice under cold water until the water runs clear. Drain and set aside.

  2. 2

In a large pot, bring the water to a boil. Add the rinsed rice and cook on medium heat until the rice is tender and water is absorbed, about 15 minutes. Fluff with a fork and set aside.

  3. 3

In a separate pan, heat the ghee over medium heat. Add the mixed nuts and sauté until golden brown, then add the raisins and sauté for another minute.

  4. 4

Stir in the sugar and cardamom powder, mixing well until the sugar dissolves.

  5. 5

Add the cooked rice to the pan with the nut mixture and gently mix until well combined. Add the saffron with the warm milk for color and flavor.

  6. 6

Cover the pan and let the Zarda steam on low heat for about 10 minutes to allow the flavors to meld together.

  7. 7

Serve warm as a delicious sweet treat, garnished with additional nuts if desired.
