- 1 cup Basmati rice
- 2 cups water
- 3/4 cup sugar
- 1/4 cup ghee or clarified butter
- 1/2 cup mixed nuts
- 1/2 cup raisins
- 1 teaspoon cardamom powder
- a few strands saffron

Rinse the soaked Basmati rice under cold water until the water runs clear. Drain and set aside.

In a large pot, bring the water to a boil. Add the rinsed rice and cook on medium heat until the rice is tender and water is absorbed, about 15 minutes. Fluff with a fork and set aside.

In a separate pan, heat the ghee over medium heat. Add the mixed nuts and sauté until golden brown, then add the raisins and sauté for another minute.

Stir in the sugar and cardamom powder, mixing well until the sugar dissolves.

Add the cooked rice to the pan with the nut mixture and gently mix until well combined. Add the saffron with the warm milk for color and flavor.

Cover the pan and let the Zarda steam on low heat for about 10 minutes to allow the flavors to meld together.
