Warm your soul with Yushka, a hearty Eastern European beef soup brimming with tender shank, vibrant vegetables, and aromatic garlic. Ideal for cozy weeknight dinners or gatherings with loved ones.

Ingredients

  • 1 kg beef shank
  • 2 liters water
  • 2 medium potatoes
  • 1 medium carrot
  • 1 medium onion
  • 3 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bunch fresh parsley

Method

  1. 1

In a large pot, add the beef shank and water. Bring to a boil over high heat.

  2. 2

Once boiling, reduce the heat and skim off any foam that forms on the surface.

  3. 3

Add the chopped onion, grated carrot, and minced garlic to the pot. Season with salt and black pepper.

  4. 4

Cover and simmer for about 45 minutes until the beef is tender.

  5. 5

Add the diced potatoes to the pot and continue to cook for an additional 15 minutes.

  6. 6

Once the potatoes are cooked, remove the beef shank and shred the meat. Return the shredded beef back to the pot.

  7. 7

Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
