Indulge in a hearty bowl of yam porridge, a comforting West African dish that combines creamy yam with rich palm oil and aromatic spices. Perfect for a cozy weeknight dinner or a special gathering with friends.

- 1 kg yam
- 4 cups water
- 1 cup palm oil
- 1 cup onion
- 2 tablespoons ground crayfish
- 1 tablespoon salt
- 2 cups vegetable broth
- 1 teaspoon pepper

Peel and chop the yam into small cubes.

In a large pot, combine the yam cubes and water. Bring to a boil over medium heat.

Once boiling, reduce the heat and let the yam simmer until soft, about 15-20 minutes.

Drain any excess water from the boiled yam and mash it slightly with a wooden spoon.

In a separate pan, heat the palm oil and sauté the chopped onion until translucent.

Add the sautéed onions to the mashed yam mixture along with the vegetable broth, ground crayfish, salt, and pepper. Stir well to combine.

Cook the yam mixture on low heat for another 5-10 minutes, stirring occasionally until it reaches a porridge-like consistency.
