- 1 kg bone-in lamb or chicken
- 2 cups basmati rice
- 1 large onion
- 3 tablespoons ghee or clarified butter
- 4 cups water
- 3 whole green cardamom pods
- 4 cloves whole cloves
- 1 stick cinnamon
- 2 teaspoons salt
- 1 cup fresh cilantro
Method

In a large pot, heat the ghee over medium heat. Add the sliced onions and sauté until golden brown.

Add the lamb or chicken pieces to the pot and sear them on all sides until browned.

Pour in the water and bring it to a boil. Add the green cardamom pods, cloves, cinnamon stick, and salt. Reduce heat and simmer for about 30 minutes, until the meat is tender.

Once the meat is cooked, remove it from the pot and strain the broth. Measure out 4 cups of the broth and set aside.

In the same pot, add the soaked basmati rice and the reserved broth. Bring to a boil, then reduce heat to low and cover. Cook for about 20 minutes, or until the rice is tender and has absorbed all the liquid.

Gently fluff the rice with a fork and fold in the cooked meat. Let it rest for 5 minutes.

Garnish with fresh cilantro before serving.

Serve hot with yogurt or salad on the side.
