Indulge in the sweet and creamy delight of Xoi, a Vietnamese sticky rice dish enriched with coconut milk and topped with crispy shallots and sesame seeds. Perfect for breakfast or a festive gathering!

Ingredients

  • 2 cups glutinous rice
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup mung beans
  • 1/4 cup fried shallots
  • 1/4 cup sesame seeds

Method

    Rinse the soaked glutinous rice under cold water until the water runs clear, then drain well.

    In a steamer, place the drained rice in a cloth-lined bamboo or metal steamer, and steam for about 30 minutes until the rice is cooked through.

    While the rice is steaming, rinse the soaked mung beans and steam them separately for about 20 minutes until soft.

    In a saucepan, combine the coconut milk, sugar, and salt. Heat gently, stirring until the sugar dissolves. Do not boil.

    Once the rice is done steaming, mix it with the coconut milk mixture and the steamed mung beans in a large bowl until evenly combined.

    Transfer the mixture back to the steamer and steam for an additional 10 minutes to allow the flavors to meld.

    Serve the xoi warm, garnished with fried shallots and toasted sesame seeds.
