Experience the vibrant flavors of Brazilian cuisine with Xinxim de Galinha, a rich chicken stew simmered in creamy coconut milk and infused with peanuts and spices. Perfect for a cozy weeknight dinner or a festive gathering.
IngredientsWhat you need
- 1 kg chicken thighs
- 1 cup coconut milk
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons peanut butter
- 2 tablespoons palm oil
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup water
Method
- 1
In a large bowl, combine the chicken thighs with cumin, salt, and black pepper. Mix well to coat the chicken evenly.
- 2
In a large pot, heat the palm oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- 3
Add the chicken to the pot and cook until it is browned on all sides, about 10 minutes.
- 4
Stir in the peanut butter and coconut milk, mixing well to combine. Add the water and bring the mixture to a boil.
- 5
Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
- 6
Once cooked, taste and adjust seasoning if needed. Cook uncovered for an additional 10 minutes if you want a thicker sauce.
- 7
Serve hot, ideally with rice or farofa (toasted cassava flour).
