- 800 grams beef ribs or shoulder
- 2 tablespoons olive oil
- 2 medium onions
- 3 cloves garlic
- 500 ml dark Belgian beer
- 2 tablespoons brown sugar
- 2 teaspoons mustard
- 1 teaspoon thyme
- 2 bay leaves bay leaves

- pepper to taste black pepper
Method

Heat olive oil in a large pot over medium heat. Brown the beef chunks on all sides, then remove and set aside.

In the same pot, add the chopped onions and cook until soft and translucent, about 5-7 minutes.

Add minced garlic and cook for another minute until fragrant.

Return the browned beef to the pot and stir in the dark beer, brown sugar, mustard, thyme, and bay leaves.

Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 2 hours, stirring occasionally.

After 2 hours, check the tenderness of the meat. If it’s not tender enough, continue cooking for an additional 30 minutes.
