Savor the taste of East Africa with these delightful Vitumbua, fluffy rice flour cakes infused with creamy coconut milk and a hint of sweetness. Perfect for breakfast or a snack, they bring warmth to any gathering.

Ingredients

  • 2 cups rice flour
  • 1 cup coconut milk
  • 1 cup water
  • 1 tablespoon sugar
  • 1 teaspoon yeast
  • 1/2 teaspoon salt
  • 1 tablespoon sesame seeds
  • oil for frying vegetable oil

Method

    In a bowl, combine rice flour, sugar, salt, and yeast. Mix well.

    Add coconut milk and water to the dry ingredients. Stir until smooth and well combined.

    Cover the batter with a cloth and let it rest for about 30 minutes in a warm place to allow it to rise.

    Heat a non-stick frying pan over medium heat and add a little vegetable oil to coat the surface.

    Pour a ladle of the batter into the pan, spreading it slightly to form a round shape. Optionally, sprinkle sesame seeds on top.
