Experience the bold flavors of Indian cuisine with this spicy Vindaloo, featuring tender pork shoulder marinated in a tangy vinegar and spice blend. Perfect for a cozy weeknight dinner that warms the soul.

Ingredients

  • 1 kg pork shoulder
  • 2 tablespoons vegetable oil
  • 2 large onions
  • 6 cloves garlic
  • 2 inches ginger
  • 3 tablespoons vinegar
  • 2 tablespoons vindaloo spice mix
  • 1 cup water

Method

  1. 1

In a bowl, marinate the pork with vinegar, garlic, ginger, and vindaloo spice mix. Let it sit for at least 30 minutes.

  2. 2

Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.

  3. 3

Add the marinated pork along with the marinade to the pot. Cook for 5-7 minutes until the meat is browned.

  4. 4

Pour in the water, bring to a boil, then reduce the heat. Cover and simmer for about 1 hour until the pork is tender.

  5. 5

Stir occasionally, adding more water if necessary to prevent sticking.

  6. 6

Once the pork is tender and the sauce has thickened, remove from heat. Let it rest for a few minutes before serving.

  7. 7

Serve hot with rice or naan, garnished with fresh coriander if desired.
