- 2 tablespoons vegetable oil
- 2 large onions
- 6 cloves garlic
- 2 inches ginger
- 3 tablespoons vinegar
- 2 tablespoons vindaloo spice mix
- 1 cup water

In a bowl, marinate the pork with vinegar, garlic, ginger, and vindaloo spice mix. Let it sit for at least 30 minutes.

Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.

Add the marinated pork along with the marinade to the pot. Cook for 5-7 minutes until the meat is browned.

Pour in the water, bring to a boil, then reduce the heat. Cover and simmer for about 1 hour until the pork is tender.
