- 4 medium boiled potatoes
- 1 cup besan (gram flour)
- 2 green chilies finely chopped
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 4 pav soft bread rolls
- to taste salt

Method

Heat oil in a pan and add mustard seeds. Once they splutter, add chopped green chilies and turmeric powder.

Add the mashed potatoes to the pan and mix well. Season with salt. Allow it to cool slightly.

Shape the potato mixture into small balls (vada).

In a bowl, make a batter with besan, water, and a pinch of salt. The batter should be thick enough to coat the vadas.

Heat oil in a deep pan for frying. Dip each vada into the besan batter and carefully drop it into the hot oil.

Fry until golden brown and crispy. Remove and drain on paper towels.

Serve the hot vadas in pav, optionally adding chutney or fried green chilies for extra flavor.
