- 1 cup Uttapam batter (idli or dosa batter)
- 1 medium onion
- 1 medium tomato
- 1/4 cup green bell pepper
- 1/4 cup coriander leaves
- 1 teaspoon black mustard seeds
- 2 tablespoons oil
- to taste salt
Method

Heat 1 tablespoon of oil in a non-stick pan over medium heat. Add mustard seeds and let them splutter.

Add the chopped onions and sauté until they turn translucent.

Mix in the chopped tomatoes and bell pepper, and cook for 2-3 minutes until soft.

Pour the Uttapam batter into the pan and spread it evenly to form a thick pancake.

Cook on medium heat for about 4-5 minutes until the bottom is golden brown. Drizzle a little oil around the edges if desired.

Flip the Uttapam and cook for another 4-5 minutes until the other side is golden brown.

Remove from the pan and garnish with chopped coriander leaves.

Serve hot with coconut chutney or sambar.
