- 2 medium potatoes
- 1 cup ground peanuts
- 2 cups chicken broth
- 1 medium onion
- 2 tablespoons vegetable oil
- 1 teaspoon curry powder

In a pot, bring water to a boil and add the diced potatoes. Cook until tender, about 10-15 minutes. Drain and set aside.

In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

Stir in the ground peanuts (or peanut butter) and curry powder, and cook for an additional 2 minutes, allowing the flavors to meld.
