Savor the comforting flavors of Umngqusho, a traditional South African dish made with creamy coconut milk, sweet raisins, and hearty samp. Perfect for a cozy weeknight dinner or a special family gathering.

Ingredients

  • 1 cup dried samp (crushed corn)
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 litre water
  • 1 cup coconut milk
  • 1 tablespoon vanilla extract
  • 1 cup raisins
  • 1 tablespoon butter

Method

    Rinse and drain the soaked samp. Place it in a pot with 1 litre of water and salt.

    Bring the water to a boil, then reduce to a simmer and cover the pot. Cook for about 30-40 minutes until the samp is tender.

    Once the samp is cooked, add the coconut milk, sugar, and butter. Stir well to combine.

    If using, add the raisins and vanilla extract. Cook for an additional 10-15 minutes on low heat until the mixture thickens.

    Remove from heat and let it cool slightly. The dish can be served warm or chilled.
