Savor the comforting warmth of Uji, a traditional East African porridge made from nutrient-rich sorghum flour. Perfect for a cozy breakfast or a nourishing snack, this creamy delight is subtly sweetened with vanilla and sugar.

Ingredients

  • 1 cup sorghum flour
  • 4 cups water
  • 1 tablespoon sugar
  • 1 pinch salt
  • 1 cup milk
  • 1 teaspoon vanilla extract

Method

  1. 1

In a large saucepan, bring 3 cups of water to a boil over medium heat.

  2. 2

In a separate bowl, mix the sorghum flour with 1 cup of cold water to create a smooth paste.

  3. 3

Once the water is boiling, slowly stir in the flour paste, whisking continuously to prevent lumps.

  4. 4

Reduce the heat to low and cook for about 10 minutes, stirring frequently until the mixture thickens.

  5. 5

Add sugar, salt, milk, and vanilla extract to the mixture, stirring well to combine.

  6. 6

Cook for an additional 2-3 minutes until heated through, then remove from heat.

  7. 7

Serve warm, optionally topped with fruit or honey if desired.
