Savor the comforting embrace of homemade udon noodles, perfectly paired with a rich dashi broth and a splash of soy sauce. Ideal for a cozy weeknight dinner or a delightful weekend lunch with friends.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 4 cups dashi broth
  • 2 stalks green onion
  • 1/2 cup soy sauce
  • 1 tablespoon mirin

Method

    In a large mixing bowl, combine the flour and salt. Gradually add the water while mixing until a dough forms.

    Knead the dough on a floured surface for about 10 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

    After resting, roll out the dough to about 1/4 inch thickness and cut into strips approximately 1/4 inch wide to form the udon noodles.

    Bring a large pot of water to a boil. Add the udon noodles and cook for about 5-7 minutes until they float to the surface and are tender.

    In a separate pot, heat the dashi broth. Add soy sauce and mirin, stirring to combine, and bring to a simmer.

    Once the noodles are cooked, drain them and rinse briefly with cold water. Serve the noodles in bowls and ladle the hot dashi broth over them.

    Garnish with chopped green onions and serve immediately.
