Experience the vibrant flavors of this traditional pickled vegetable dish, Turshi, with its tangy vinegar and aromatic spices. Perfect as a zesty side for weeknight dinners or festive gatherings.

Ingredients

  • 2 cups mixed vegetables (e.g., cauliflower, carrots, bell peppers)
  • 1 cup water
  • 1 cup white vinegar
  • 1 tablespoon salt
  • 2 tablespoons sugar
  • 1 tablespoon black peppercorns
  • 1 teaspoon coriander seeds
  • 1 teaspoon garlic cloves

Method

  1. 1

Prepare mixed vegetables by cutting them into small pieces.

  2. 2

In a bowl, combine the mixed vegetables with water and let them soak for about 15 minutes.

  3. 3

In a separate pot, heat the white vinegar, then add salt, sugar, black peppercorns, coriander seeds, and garlic. Stir until the salt and sugar dissolve.

  4. 4

Drain the mixed vegetables and pack them tightly into a clean glass jar.

  5. 5

Pour the vinegar mixture over the vegetables in the jar, ensuring they are fully submerged.

  6. 6

Seal the jar tightly and let it sit at room temperature for at least 24 hours before consuming, to allow the flavors to develop.

  7. 7

For best flavor, store in the refrigerator and consume within a few weeks.
