- 1 kg sugar
- 5 liters water
- 1 tablespoon yeast
- 1 tablespoon lemon juice

Wash and clean the plums thoroughly under running water.

Remove the pits from the plums and mash the fruit in a large fermentation container.

Add the sugar, yeast, and lemon juice (if using) to the mashed plums and mix well.

Cover the container with a cloth and let it ferment at room temperature for about 2-3 weeks until bubbles form and fermentation is active.

After fermentation, transfer the mixture to a distillation apparatus and heat slowly to separate the alcohol from the mash.

Collect the distillate (the Țuică) and store it in clean bottles, preferably glass, and let it age for several months for better flavor.
