Indulge in the rich, caramel-like sweetness of Torta de Lúcuma, a Peruvian delight made with creamy lúcuma pulp and a hint of vanilla. Perfect for a special occasion or a cozy dessert after dinner.
IngredientsWhat you need
- 1 cup lúcuma pulp
- 1 cup sugar
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 cup milk
- 1/2 cup unsalted butter
- 3 large eggs
- 1/2 tsp vanilla extract
Method
- 1
Preheat your oven to 180°C (350°F). Grease and flour a round cake pan.
- 2
In a large bowl, combine the sugar, melted butter, and eggs. Mix well until creamy.
- 3
Add the lúcuma pulp and vanilla extract to the mixture and stir until well combined.
- 4
In another bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until smooth.
- 5
Pour the batter into the prepared cake pan and spread evenly.
- 6
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 7
Once baked, let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- 8
Serve the Torta de Lúcuma plain or with whipped cream on top.
