Warm up with this comforting tomato soup, where ripe tomatoes mingle with aromatic garlic and fresh basil. Perfect for a cozy weeknight dinner or a light lunch, it’s a bowl of pure joy!

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Method

  1. 1

In a large pot, heat the olive oil over medium heat.

  2. 2

Add the chopped onion and sauté until translucent, about 5 minutes.

  3. 3

Stir in the minced garlic and cook for another minute until fragrant.

  4. 4

Add the chopped tomatoes, vegetable broth, sugar, salt, and black pepper to the pot.

  5. 5

Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, allowing the flavors to meld.

  6. 6

Using an immersion blender, puree the soup until smooth, or transfer to a blender in batches.

  7. 7

Stir in the chopped basil just before serving.

  8. 8

Serve hot, optionally with crusty bread on the side.
