- 3/4 cup granulated sugar
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 2 cups strong brewed coffee
- 1/2 cup coffee liqueur
- 24 pieces ladyfinger biscuits
- 2 tablespoons unsweetened cocoa powder

In a large mixing bowl, whisk the egg yolks and granulated sugar together until pale and thick.

Add the mascarpone cheese to the egg mixture and gently fold until well combined and smooth.

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture in three parts until fully combined.

In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

Layer half of the soaked ladyfingers in the bottom of a rectangular dish. Spread half of the mascarpone mixture over the ladyfingers.
