Savor the bright flavors of this easy tilapia dish, infused with ginger, garlic, and a splash of lemon. Perfect for a quick weeknight dinner that feels special with every bite.
IngredientsWhat you need
- 4 pieces tilapia fish
- 2 tablespoons groundnut oil
- 1 tablespoon ginger
- 1 tablespoon garlic
- 1 teaspoon ground pepper
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 2 pieces fresh tomatoes
Method
- 1
In a mixing bowl, combine groundnut oil, grated ginger, minced garlic, ground pepper, lemon juice, and salt to create a marinade.
- 2
Make diagonal cuts on both sides of each tilapia fish to allow the marinade to penetrate.
- 3
Rub the marinade generously all over the tilapia, ensuring it gets into the cuts. Let it marinate for at least 30 minutes.
- 4
Preheat the grill or barbecue to medium heat. If using charcoal, allow the coals to turn white.
- 5
Place the marinated tilapia on the grill. Cook for about 8-10 minutes on each side or until the fish is cooked through and has nice grill marks.
- 6
While grilling, baste the fish with any leftover marinade for extra flavor, if desired.
- 7
Once cooked, remove the tilapia from the grill and let it rest for a few minutes.
- 8
Serve the grilled tilapia garnished with fresh tomatoes and enjoy with your favorite side dish.
