Experience the rich, savory flavors of Thit Kho, a Vietnamese caramelized pork belly dish simmered in coconut water and spices. Perfect for a cozy weeknight dinner, it pairs beautifully with steamed rice.

Ingredients

  • 500 grams pork belly
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 cup coconut water
  • 1 teaspoon black pepper
  • 2 stalks scallions

Method

  1. 1

In a pot, add the pork belly pieces and sauté over medium heat until the meat is slightly browned.

  2. 2

Add fish sauce, soy sauce, and brown sugar to the pot, mixing well to coat the pork.

  3. 3

Pour in the coconut water and bring the mixture to a boil.

  4. 4

Reduce the heat and let it simmer for about 10 minutes, allowing the sauce to thicken.

  5. 5

Season with black pepper and taste; adjust seasoning if needed.

  6. 6

Once done, remove from heat and garnish with chopped scallions.

  7. 7

Serve hot with steamed rice and enjoy your Thit Kho!

My family absolutely loved the Thit Kho, and the rich flavors of the pork belly brought everyone together at the dinner table. They couldn't stop raving about how tender it was, and it disappeared faster than I expected.

Making Thit Kho for the first time was a bit intimidating, but it turned out surprisingly well. The combination of flavors was rich and satisfying, giving me the confidence to try more Vietnamese dishes.
