Indulge in a delightful Japanese tendon featuring crispy tempura shrimp and sweet potato, served over fluffy rice and vibrant mixed vegetables. Perfect for a cozy weeknight dinner or a special treat.

Ingredients

  • 1 cup tempura batter mix
  • 1 cup water
  • 200 grams shrimp
  • 1 medium sweet potato
  • 1 cup mixed vegetables
  • 2 cups cooked rice
  • 1 tablespoon soy sauce
  • 1 teaspoon wasabi

Method

  1. 1

In a mixing bowl, combine the tempura batter mix and chilled water to create a smooth batter.

  2. 2

Heat oil in a deep frying pan to 180°C (350°F).

  3. 3

Dip the shrimp and sweet potato slices into the batter, ensuring they are fully coated.

  4. 4

Carefully place the battered shrimp and vegetables into the hot oil. Fry until golden brown, about 3-4 minutes.

  5. 5

Remove the tempura from the oil and drain on paper towels to remove excess oil.

  6. 6

Serve the tempura over a bed of cooked rice, drizzling with soy sauce and adding wasabi if desired.
