Ingredients

  • 1 cup all-purpose flour
  • 1 cup ice-cold water
  • 1 large egg
  • 2 cups vegetable oil
  • 1 cup vegetables (e.g., sweet potatoes, bell peppers, zucchini)
  • 1 cup shrimp
  • to taste pinch salt

Method

    In a mixing bowl, combine the flour and a pinch of salt. In another bowl, mix the ice-cold water and the beaten egg.

    Gradually add the flour mixture to the egg mixture, stirring gently until just combined. Be careful not to over-mix; the batter should be lumpy.

    In a deep frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).
