Indulge in the sweet aroma of Tcharek, a delightful North African pastry filled with almond paste and kissed with orange blossom water. Perfect for festive gatherings or a cozy afternoon treat with tea.

- 500 g semolina flour
- 250 g butter
- 150 g sugar
- 1 cup water
- 1 tsp yeast
- 1 tsp vanilla extract
- 200 g almond paste
- 1 tbsp orange blossom water
Method

In a large bowl, combine the semolina flour, melted butter, sugar, and yeast. Mix well.

Gradually add the water while kneading the dough until smooth and elastic. Cover and let it rest for 15 minutes.

Preheat your oven to 180°C (350°F).

Divide the dough into small balls, then roll each ball into a circle about 10 cm in diameter.

Place a small amount of almond paste in the center of each circle and fold the dough over to seal, shaping it into a crescent.

Place the filled crescents on a baking sheet lined with parchment paper. Brush with melted butter and sprinkle with sugar if desired.
