Indulge in the vibrant flavors of West Africa with Tatale, a delightful plantain fritter seasoned with onions and spices. Perfect for a cozy weeknight dinner or a festive gathering, these crispy bites are sure to impress!

Ingredients

  • 2 cups overripe plantains
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup onion
  • 1/4 cup vegetable oil
  • 1 teaspoon ground pepper

Method

  1. 1

In a large bowl, mash the overripe plantains until smooth.

  2. 2

Add the all-purpose flour, baking powder, salt, chopped onion, and ground pepper to the mashed plantains. Mix well until all ingredients are combined.

  3. 3

Heat the vegetable oil in a frying pan over medium heat.

  4. 4

Once the oil is hot, scoop a spoonful of the plantain mixture and gently drop it into the oil, flattening it slightly with the back of the spoon. Fry until golden brown on both sides, about 3-4 minutes per side.

  5. 5

Remove the tatale from the oil and place on paper towels to drain excess oil.

  6. 6

Serve hot as a snack or side dish with your favorite sauce or dip.
