- 2 cups cornmeal
- 1 cup chicken broth
- 1 cup cooked shredded chicken
- 1 cup cheese
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter
- 12 pieces corn husks

Soak the corn husks in warm water for about 30 minutes until softened. Drain and set aside.

In a large bowl, combine the cornmeal, baking powder, and salt. Mix well.

Add the melted butter and chicken broth to the dry ingredients. Mix until a smooth dough forms.

Lay a corn husk flat and spread about 1/4 cup of the dough on the husk, leaving space at the edges. Place a spoonful of shredded chicken and cheese in the center of the dough.

Fold the sides of the husk over the filling, then fold up the bottom to secure it. Repeat with the remaining husks and filling.

Place the tamales upright in a steamer basket. Cover them with a wet cloth and steam for about 1 hour, adding water as needed to the steamer.

Once cooked, let the tamales sit for 10 minutes before serving. Enjoy warm with your favorite salsa!
