- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 teaspoon dashi stock
- 1 tablespoon vegetable oil
- 1 tablespoon chopped green onions
Method

In a bowl, whisk together the eggs, sugar, soy sauce, mirin, and dashi stock until well combined.

Heat a non-stick frying pan over medium heat and add half of the vegetable oil, spreading it evenly.

Pour a small amount of the egg mixture into the pan, tilting it to create a thin layer that covers the bottom.

Cook the egg until it is just set, then roll it to one side of the pan using chopsticks or a spatula.

Add more oil if necessary, then pour another layer of the egg mixture into the empty side of the pan, lifting the rolled egg to allow the new mixture to flow underneath.

Once set, roll the cooked egg onto the new layer and repeat this process until all the egg mixture is used.

Remove the rolled tamagoyaki from the pan and let it cool slightly before slicing into bite-sized pieces.
