Experience the warmth of Moroccan cuisine with Tajine Zitoune, a fragrant chicken dish simmered with green olives, aromatic spices, and a hint of lemon. Perfect for a cozy weeknight dinner or a special gathering with loved ones.

Ingredients

  • 500 grams chicken thighs
  • 200 grams green olives
  • 2 tablespoons olive oil
  • 1 large onion
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 cup chicken broth
  • Salt and pepper to taste seasoning
  • 1 tablespoon lemon juice

Method

  1. 1

Heat the olive oil in a large tagine or heavy-bottom pot over medium heat.

  2. 2

Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 5 minutes.

  3. 3

Add the chicken thighs to the pot, browning them on all sides for about 10 minutes.

  4. 4

Stir in the ground ginger and cinnamon, mixing well to coat the chicken evenly.

  5. 5

Pour in the chicken broth (or water) and bring to a simmer. Cover and cook on low heat for about 60 minutes.

  6. 6

Add the green olives and lemon juice, seasoning with salt and pepper to taste. Simmer for an additional 20-30 minutes.

  7. 7

Once the chicken is tender and the sauce has thickened, remove from heat and let it rest for a few minutes before serving.

  8. 8

Serve hot with bread or over couscous, enjoying the aromatic flavors.
