- 500 grams chicken thighs
- 200 grams green olives
- 2 tablespoons olive oil
- 1 large onion
- 2 cloves garlic
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1 cup chicken broth
- Salt and pepper to taste seasoning
- 1 tablespoon lemon juice
Method

Heat the olive oil in a large tagine or heavy-bottom pot over medium heat.

Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 5 minutes.

Add the chicken thighs to the pot, browning them on all sides for about 10 minutes.

Stir in the ground ginger and cinnamon, mixing well to coat the chicken evenly.

Pour in the chicken broth (or water) and bring to a simmer. Cover and cook on low heat for about 60 minutes.
