Experience the heart of Persian cuisine with Tahdig, a fragrant basmati rice dish with a golden, crispy crust, enriched by saffron and yogurt. Ideal for a cozy family dinner or a festive gathering, it’s a true culinary delight.

- 2 cups basmati rice
- 4 cups water
- 1 cup plain yogurt
- 1/4 cup butter
- 1 tsp salt
- 1 tsp saffron threads
- 1 tbsp water

Rinse the soaked basmati rice under cold water until the water runs clear to remove excess starch.

In a large pot, bring 4 cups of water to a boil. Add the rinsed rice and 1 tsp of salt. Cook for about 5-7 minutes until the rice is partially cooked (it should still be firm).

Drain the rice and set it aside. In a small bowl, dissolve the saffron threads in 1 tbsp of warm water, and mix this with the yogurt.

In the same pot, melt 1/4 cup of butter over medium heat. Spread half of the rice evenly in the pot, followed by the yogurt mixture, and then layer the remaining rice on top.

Cover the pot with a clean cloth and then place the lid on top. Cook on low heat for about 45-50 minutes to allow the rice to steam and form a crispy crust (tahdig).

Once cooked, carefully invert the pot onto a serving platter to reveal the golden tahdig. Serve warm with your favorite stews or yogurt.
