- 3 large eggs
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 cup parmesan cheese

On a clean work surface, form the flour into a mound and create a well in the center.

Crack the eggs into the well and add the salt and olive oil.

Using a fork, gently beat the eggs, gradually incorporating the flour from the edges of the well until a dough begins to form.

Knead the dough for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
