Indulge in the heartwarming flavors of Austrian Tafelspitz, a tender beef dish simmered with aromatic vegetables and herbs. Ideal for a cozy family dinner or a festive gathering, this classic recipe warms the soul.
IngredientsWhat you need
- 1.5 kg beef (Tafelspitz cut)
- 3 liters water
- 2 medium carrots
- 1 medium celery root (celeriac)
- 1 small leek
- 1 bunch fresh parsley
- 5 pieces black peppercorns
- 1 tsp salt
Method
- 1
Place the beef in a large pot and cover with cold water.
- 2
Bring the water to a boil over medium heat, skimming off any foam that rises to the surface.
- 3
Once boiling, reduce the heat to low and add the carrots, celery root, leek, parsley, peppercorns, and salt.
- 4
Cover the pot and let it simmer gently for about 2.5 hours, or until the meat is tender.
- 5
Remove the Tafelspitz from the pot and let it rest for a few minutes before slicing.
- 6
Strain the broth through a fine sieve to remove the vegetables and spices.
- 7
Serve the sliced beef with the clear broth and your choice of side dishes, like boiled potatoes or apple-horseradish sauce.
- 8
Garnish with fresh parsley if desired.
