Ingredients

  • 1.5 kg beef (Tafelspitz cut)
  • 3 liters water
  • 2 medium carrots
  • 1 medium celery root (celeriac)
  • 1 small leek
  • 1 bunch fresh parsley
  • 5 pieces black peppercorns
  • 1 tsp salt

Method

    Place the beef in a large pot and cover with cold water.

    Bring the water to a boil over medium heat, skimming off any foam that rises to the surface.

    Once boiling, reduce the heat to low and add the carrots, celery root, leek, parsley, peppercorns, and salt.

    Cover the pot and let it simmer gently for about 2.5 hours, or until the meat is tender.
