- 1 cup bulgur wheat
- 2 cups parsley
- 1 cup tomatoes
- 1 cup cucumbers
- 0.5 cup green onions
- 0.5 cup fresh mint leaves

- 2 tablespoons lemon juice

Rinse the bulgur wheat under cold water in a fine mesh strainer. Allow it to drain and soak in a bowl of water for about 10-15 minutes until softened.

In a large bowl, combine the finely chopped parsley, diced tomatoes, diced cucumbers, sliced green onions, and chopped mint leaves.

Once the bulgur is softened, drain any excess water and add it to the bowl with the chopped vegetables.
