Ingredients

  • 1 cup bulgur wheat
  • 2 cups parsley
  • 1 cup tomatoes
  • 1 cup cucumbers
  • 0.5 cup green onions
  • 0.5 cup fresh mint leaves
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice
  • to taste pinch salt

    Rinse the bulgur wheat under cold water in a fine mesh strainer. Allow it to drain and soak in a bowl of water for about 10-15 minutes until softened.
