Svíčková is a traditional Czech dish featuring tender beef sirloin simmered in a rich, creamy vegetable sauce with a hint of lemon. Ideal for a cozy family dinner or a festive gathering, it warms the heart and soul.

- 1.5 kg beef sirloin
- 2 tablespoons butter
- 2 medium carrots
- 1 medium celery root
- 1 medium onion
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons lemon juice
- 1 teaspoon ground black pepper
- 1 teaspoon salt

In a large pot, melt the butter over medium heat and brown the beef sirloin on all sides. Remove the beef and set aside.

In the same pot, add the chopped onion, carrots, and celery root. Sauté until the vegetables are softened, about 5-7 minutes.

Return the browned beef to the pot and add the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 1.5 hours or until the beef is tender.

Once the beef is cooked, remove it from the pot and slice it into serving pieces. Keep warm.

Strain the vegetable mixture and return the liquid to the pot. Blend the vegetables until smooth and add the heavy cream, lemon juice, salt, and pepper. Stir well and simmer for another 10 minutes.

Serve the sliced beef topped with the creamy vegetable sauce. Traditionally served with bread dumplings or rice.
