Supu ya Kuku is a heartwarming East African chicken soup infused with aromatic ginger, garlic, and creamy coconut milk. Enjoy this comforting dish on a cozy weeknight or as a nourishing meal for friends and family.

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup coconut milk
  • 2 sprigs fresh coriander

Method

    Heat the vegetable oil in a large pot over medium heat.

    Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

    Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
