- 2 cups Arborio rice
- 4 cups chicken broth
- 1 cup grated Parmesan cheese
- 1 cup mozzarella cheese
- 1 medium onion
- 2 tablespoons olive oil
- 1 cup breadcrumbs
- 2 large eggs

In a saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent.

Add the Arborio rice to the onions and toast for about 2 minutes, stirring frequently.

Gradually add the chicken broth, one ladle at a time, stirring continuously until the rice is creamy and cooked (about 15-20 minutes).

Remove the rice from heat and let it cool slightly, then stir in the grated Parmesan cheese.

Once the rice mixture is cool enough to handle, take a small amount in your hand, place a cube of mozzarella in the center, and form it into a ball.

Dip the rice balls in beaten eggs, then roll them in breadcrumbs until coated.
