Savor the warmth of Sundubu Jjigae, a comforting Korean stew brimming with silky soft tofu, tender pork belly, and vibrant zucchini. Perfect for a cozy weeknight dinner or a special gathering with friends.

Ingredients

  • 300 g soft tofu
  • 100 g pork belly
  • 1 tablespoon gochugaru
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 medium zucchini
  • 1 stalk green onion
  • 1 egg large egg

Method

    In a pot over medium heat, cook the pork belly until it's browned.

    Add the gochugaru to the pot and stir for about 30 seconds to release its flavor.

    Pour in the vegetable broth and soy sauce, bringing it to a gentle simmer.

    Add the sliced zucchini and cook for about 5 minutes until slightly softened.
