Sulu Köfte is a hearty Turkish dish that combines tender ground beef and nutty bulgur, simmered in a savory broth with fresh parsley. Enjoy this comforting meal on a cozy weeknight or serve it at your next gathering for a taste of tradition.

Ingredients

  • 300 grams ground beef
  • 1 cup fine bulgur
  • 1 medium onion
  • 2 tablespoons tomato paste
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 liter water
  • 1 tablespoon olive oil
  • 1 bunch fresh parsley

Method

    In a large bowl, combine ground beef, soaked bulgur, finely chopped onion, tomato paste, salt, and black pepper. Mix well until fully combined.

    Shape the meat mixture into small meatballs, about the size of a walnut, and set aside.

    In a large pot, heat olive oil over medium heat. Add the formed meatballs and sauté until browned on all sides.

    Pour in the water and bring to a boil. Once boiling, reduce heat and let it simmer for about 30 minutes until the meatballs are cooked through.

    Taste the broth and adjust seasoning if necessary. If you prefer a thicker soup, you can add a little more tomato paste at this stage.
