Savor the vibrant flavors of Sultan Ibrahim, a hearty Middle Eastern dish featuring nutty bulgur, protein-rich chickpeas, and zesty lemon. Ideal for a cozy weeknight dinner or a delightful gathering with friends.
IngredientsWhat you need
- 1 cup bulgur wheat
- 2 cups water
- 1 medium onion
- 2 tablespoons olive oil
- 1 cup chickpeas
- 1 teaspoon cumin
- 1 cup parsley
- 1 lemon Ingredient 8
Method
- 1
In a medium saucepan, bring 2 cups of water to a boil.
- 2
Add the rinsed bulgur wheat to the boiling water. Reduce the heat, cover, and let it simmer for about 15 minutes until the water is absorbed.
- 3
In a skillet, heat olive oil over medium heat. Sauté the chopped onion until it becomes translucent, about 5 minutes.
- 4
Stir in the cooked chickpeas and ground cumin, and cook for another 5 minutes, stirring occasionally.
- 5
Once the bulgur is cooked, fluff it with a fork and add it to the skillet with the chickpeas and onions.
- 6
Add the chopped parsley and lemon juice, mixing everything together until well combined.
- 7
Remove from heat and let it sit for a few minutes before serving warm or at room temperature.
- 8
Serve as a delicious side dish to grilled meats or as a main vegetarian option.
