Indulge in the comforting flavors of Stoemp, a traditional Belgian dish that combines creamy mashed potatoes with sweet carrots and tender leeks. It's a hearty weeknight dinner that warms the soul, especially when paired with crispy sausage or bacon.

Ingredients

  • 1 kg potatoes
  • 250 g carrots
  • 200 g leeks
  • 100 g butter
  • 100 ml milk
  • to taste salt
  • to taste black pepper
  • optional sausage or bacon

Method

    In a large pot, add the chopped potatoes and carrots. Cover with cold water and add a pinch of salt.

    Bring the pot to a boil and cook for about 15-20 minutes, or until the potatoes and carrots are tender.

    In the last 5 minutes of cooking, add the sliced leeks to the pot.

    Once cooked, drain the vegetables and return them to the pot. Add butter and milk, and mash until smooth.
