Preheat your oven to 200°C (390°F). Prepare a spettekaka stick or a long skewer.

In a large mixing bowl, whisk the egg whites until stiff peaks form.

In another bowl, beat the egg yolks and add the sugar, mixing until light and creamy. Then add the potato flour, vanilla extract, and salt.

Gently fold the whipped egg whites into the yolk mixture until combined without losing the airiness.

Pour the batter onto the prepared skewer, spinning to create a spiral shape. Place it upright in the oven.
