Indulge in the airy delight of Spettekaka, a traditional Swedish cake made with whipped eggs and potato flour, layered with luscious whipped cream and fresh berries. Ideal for a festive gathering or a cozy afternoon treat.

Ingredients

  • 5 large eggs
  • 200 g granulated sugar
  • 100 g potato flour
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 200 g whipped cream
  • 100 g berries

Method

  1. 1

Preheat your oven to 200°C (390°F). Prepare a spettekaka stick or a long skewer.

  2. 2

In a large mixing bowl, whisk the egg whites until stiff peaks form.

  3. 3

In another bowl, beat the egg yolks and add the sugar, mixing until light and creamy. Then add the potato flour, vanilla extract, and salt.

  4. 4

Gently fold the whipped egg whites into the yolk mixture until combined without losing the airiness.

  5. 5

Pour the batter onto the prepared skewer, spinning to create a spiral shape. Place it upright in the oven.

  6. 6

Bake for about 90 minutes, or until golden brown and firm to the touch. Let it cool completely.

  7. 7

Serve with whipped cream and garnish with fresh berries if desired.
