- 500 grams beef brisket
- 2 liters water
- 2 tablespoons vegetable oil
- 4 cloves garlic
- 3 cm ginger
- 1 stalk lemongrass
- 2 leaves kaffir lime
- 1 teaspoon salt
- 500 ml coconut milk
- 2 tablespoons fried shallots
- 1 bunch fresh cilantro
Method

In a large pot, add the beef brisket and water. Bring to a boil and then simmer for about 60 minutes or until the beef is tender.

While the beef is cooking, heat vegetable oil in a skillet over medium heat. Sauté garlic, ginger, and lemongrass until fragrant.

Add the sautéed mixture to the pot with the simmering beef, along with the kaffir lime leaves and salt. Continue to simmer for an additional 30 minutes.

Pour in the coconut milk and stir well. Allow to simmer for another 10 minutes without boiling.

Once done, taste and adjust seasoning if necessary. Remove from heat and let it rest for a few minutes.
