- 3 large eggs
- 1 teaspoon salt
- 1 cup ricotta cheese
- 1 cup spinach
- 1/2 cup grated parmesan cheese
- 1 cup tomato sauce
- 1 tablespoon olive oil

In a mixing bowl, combine the flour, salt, and eggs. Knead until a smooth dough forms. Wrap it in plastic wrap and let it rest for 30 minutes.

In another bowl, mix together the ricotta cheese, chopped spinach, and grated parmesan until well combined.

Roll out the rested dough on a floured surface until thin, about 1/16 inch thick.

Cut the dough into circles, using a cookie cutter or a glass. Place a tablespoon of the ricotta mixture in the center of half of the circles.

Moisten the edges of the dough circles with water, then place another circle on top and press to seal. Ensure there are no air pockets.

Bring a large pot of salted water to a boil. Carefully add the sorrentinos and cook for about 5-7 minutes, or until they float to the top.
