Indulge in the comforting flavors of Sorrentinos, a delightful Italian dish filled with creamy ricotta and fresh spinach, all enveloped in tender pasta. Perfect for a cozy weeknight dinner or a special gathering with loved ones.

Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 teaspoon salt
  • 1 cup ricotta cheese
  • 1 cup spinach
  • 1/2 cup grated parmesan cheese
  • 1 cup tomato sauce
  • 1 tablespoon olive oil

Method

  1. 1

In a mixing bowl, combine the flour, salt, and eggs. Knead until a smooth dough forms. Wrap it in plastic wrap and let it rest for 30 minutes.

  2. 2

In another bowl, mix together the ricotta cheese, chopped spinach, and grated parmesan until well combined.

  3. 3

Roll out the rested dough on a floured surface until thin, about 1/16 inch thick.

  4. 4

Cut the dough into circles, using a cookie cutter or a glass. Place a tablespoon of the ricotta mixture in the center of half of the circles.

  5. 5

Moisten the edges of the dough circles with water, then place another circle on top and press to seal. Ensure there are no air pockets.

  6. 6

Bring a large pot of salted water to a boil. Carefully add the sorrentinos and cook for about 5-7 minutes, or until they float to the top.

  7. 7

In a skillet, heat the olive oil and sauté the tomato sauce for a few minutes, then serve over the cooked sorrentinos.
