In a large pan, heat the vegetable oil over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the diced tomatoes, cumin, and paprika, cooking for another 5 minutes.

Mix in the washed rice and stir until well combined with the tomato mixture.

Pour in the chicken broth, bring to a boil, then reduce heat and cover to simmer for 20 minutes or until the rice is tender.
