Sopa da Pedra is a hearty Portuguese bean soup brimming with smoky chorizo, tender carrots, and aromatic garlic. Perfect for cozy weeknight dinners, this dish warms both the body and soul with its rich flavors.
IngredientsWhat you need
- 200 grams white beans
- 100 grams chorizo sausage
- 1 medium onion
- 2 cloves garlic
- 2 medium carrots
- 1 liter water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 stone symbolic stone
Method
- 1
In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent.
- 2
Add the sliced chorizo and sauté for a few more minutes until it starts to release its oils.
- 3
Stir in the sliced carrots and soaked white beans, mixing well with the other ingredients.
- 4
Pour in the water (or vegetable broth) and bring to a boil. Reduce heat to low and let it simmer for about 60 minutes, or until the beans are tender.
- 5
In the last 10 minutes of cooking, add in salt and black pepper to taste. Optionally, you may add the traditional stone for authenticity.
- 6
Once cooked, remove the stone (if used) and serve the soup hot, garnished with fresh parsley if desired.
