- 1 kg oxtail
- 2 liters water
- 2 tbsp vegetable oil
- 1 medium onion
- 4 cloves garlic
- 2 pcs carrots
- 2 pcs potatoes
- 3 pcs lemongrass
- 5 slices ginger
- 2 pcs bay leaves
- to taste salt
- to taste pepper
- 1 tbsp soy sauce
Method

In a large pot, boil the oxtail in water for about 10 minutes to remove impurities. Discard the water and set the oxtail aside.

In the same pot, heat vegetable oil over medium heat. Sauté the onion and garlic until fragrant.

Add the oxtail back into the pot and stir well to coat with the onion and garlic mixture.

Pour in 2 liters of fresh water, then add lemongrass, ginger, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 1.5 hours or until the oxtail is tender.

Add the carrots and potatoes to the pot. Continue to simmer for another 20-30 minutes until the vegetables are tender.

If desired, add soy sauce to the soup for extra flavor. Adjust seasoning with salt and pepper as needed.

Serve the soup hot, garnished with chopped green onions if desired.
