Experience the joy of making Songpyeon, a traditional Korean rice cake filled with sweet pine nuts and a hint of green tea. Perfect for celebrating Chuseok or enjoying a cozy weekend treat with loved ones.

- 2 cups sweet rice flour (also known as glutinous rice flour)
- 1/2 cup water
- 1 cup pine nuts
- 1 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon green tea powder
- 1 tablespoon sesame oil
Method

In a large mixing bowl, combine the sweet rice flour, salt, and half of the sugar.

Gradually add water while mixing until you form a smooth, pliable dough. If using green tea powder, mix it in at this stage.

In a separate bowl, mix the pine nuts (or choice of filling) with the remaining sugar.

Divide the dough into small balls, about the size of a golf ball. Flatten each ball into a disk in your palm.

Place a small spoonful of the filling in the center of each disk, then fold the edges over to enclose the filling and shape them into half-moons.

Boil water in a large pot, then carefully add the songpyeon. Cook for about 20 minutes until they float to the surface.

Remove from the pot and place on a plate. Brush with sesame oil to prevent sticking.
